You can use #wanikani5, #wanikani8 etc to search for specific WaniKani levels, like this: https://jisho.org/search/%23wanikani5
As for excluding tags from search this is not something I plan on implementing.

Request: WaniKani vocab tag for searching / Tag exclusion option
When looking up words, ones that are taught on WaniKani will have a label on them. But there doesn't seem to be a search tag for these words. I think that a tag like that would be very useful for searching for words that I know I'll learn eventually through WK.
Another great option would be the ability to exclude certain tagged words from search. For example, searching for "#jlpt-n5, -#adv" would return all JLPT-5 words besides adverbs.
