2. JiuquJiuqu are fermentation starters used in the production of traditional Chinese alcoholic beverages such as Shaoxing wine or Maotai. Also known as a "starter cake" or "liquor medicine", jiuqu consists of a complex mixture of various yeasts, molds, and bacteria which are cultured on a grain substrate and typically sold and stored in the form of dried cakes or powders.
