Do I use 月曜 or 月曜日 in a conversation?

I've only ever seen 月曜日 in the context of a sentence but seeing as 月曜 is its own word here, could/should it be used in a sentence?

Both are fine. Although, as the dictionary points out, 月曜日 is also an adverb while the other is not. So it might be weird to drop the 日 in 「土曜日お出かけするつもりです」 . But if you use it as a noun, like 「今週の土曜は熱いよ」 then either is fine.
