What do these signs in readings mean - for example in a word 明- (light,bright):-あ.け - the pause and the point?

The hyphen indicates if the reading is used as a suffix or prefix.

The period indicates the distinction between the reading that falls "within" the kanji, and the part that is outside the kanji, which is called okurigana.
