とんでもない has "Usually written using kana alone", there is no kanji for the word (at least not on jisho)

とんでもない is an interesting case. JMdict has all kanji forms listed as "search-only" [sK] and therefore Jisho.org does not display them. I guess the [uk] tag is still a valid tag, but you could make the case that Jisho.org should not show it if all kanji forms of the words are tagged with [sK].

As for the other verbs you mentioned, I don't see what you mean. First two are only tagged as godan as they should, and 伏せる is indeed tagged as both. But all of this is correct afaik.
