Some words such as メニュー say from _. (In this case from French)
Others such as パン (from Portuguese) don't.

What's the logic behind this?

Either the data is in the database or it is not. If you want to add something, then do so.

That said, the entry for パン has the "from Portuguese" bit for definition 1, so maybe I just don't understand what you're referring to.
